Wafers
Another
speciality, which probably originated in France and the word may have
come from the French 'gofer' meaning to flute or crisp. They have
been made in Kent since the twelfth century.
To
make them you need extra-fine flour, which is mixed to a batter with
sugar, butter and milk, perhaps flavoured with nutmeg or rosewater.
The batter is cooked in special round, or square, wafer irons [could these be Waffle Irons?], which
had long handles so that they could be held over the fire.
