Kentish Rarebit

We haven't yet tried this recipe. But we'd love to hear about it if you do.

Kentish Rarebit

A popular snack with the fruit pickers in the orchards of Kent at the turn of the 20th Century.

Serves: 4+
260g cheese
2 eating apples
35g butter
salt and pepper to taste

Peel, core and slice the apples.
Grate the cheese.
Melt the butter in a pan and gently fry the apples.
Add the grated cheese and seasoning and mix together.
Spread onto rounds of toasted Kentish huffkin or toast and place under a hot grill until the mixture is bubbling.
