Maidstone Biscuits

from what is probably an ancient traditional recipe. Popular with the
Tudors when made with rose water.
Serves:
4+
100g
butter
100g caster sugar
150g plain flour
50g ground rice and grated zest and juice of 1 orange

or
50g blanched almonds and 5ml rose water
Cream
the butter and sugar together until pale and fluffy.
Fold in the flour, juice, zest and ground rice (or the flour, almonds and rose water) and mix to make a stiff dough.
Place in small heaps on a floured baking sheet.
Bake at 180°C (350°F) mark 4 for 12-15 minutes, until golden brown.
Cool on a wire rack.
Store in an airtight container.
